Wild Caught Alaskan Cod with Fresh Sorrel Sauce

I’ve been singing the praises of lovely, lemony sorrel for a while now. The culinary herb—related to both buckwheat and rhubarb, is a perennial that grows in my garden from Spring to Fall.  Loaded with potassium and immune-boosting vitamins A and C, I use it in soups, stuff it into spanakopita, and make sauces with it. Paired with fish, sorrel sauce is a French cuisine classic. A few years back, celebrity chef Gordon Ramsay featured the sauce with seabass. Spanakopita Triangles (Spinach Sorrel + Cheese Pies)

Spanakopita—the buttery Greek comfort dish of flaky phyllo dough filled with cheese and greens, can be made as one large savory pie, or, folded up and baked into crispy little triangle hand pies as we’ve done. Although usually prepared with spinach, onion and feta cheese, in the Greek countryside lemony sorrel is sometimes a flavorful addition.  With a garden full of sorrel, I decided this recipe should include it.
